I know what you're thinking, there is 100 other recipes just like this on Pinterest. BUT!! I've been making these with my mom since I was a little girl, obviously before Pinterest was around. So basically we're real OG's when it comes to breakfast cups.
One of my favorite things to do is prep this the night before and pop them in the oven in the morning while getting ready for work or school. But today, I just made them in the morning because I have nothing else to do today! The steps are super easy, follow my lead.
What you'll need
- Cupcake pan
- 7 Eggs
- 1/2 Red bell pepper
- 1/2 Green bell pepper
- 1/2 Yellow onion
- Shredded cheese
- A few mushrooms
- 1/2 Tomato
- Seasoning (I use Flavor God)
While you're prepping all your veggies to go in your cups, pre-heat your oven to 350 degrees.
I like to use measuring bowl to throw all my ingredients in because it has a pour spout, which makes it less messy when pouring into the cupcake pan.
Your oven should definitely be hot and ready by now. Mix all ingredients together, you can even add already cooked bacon or sausage if you're a meat lover!
Throw in your seasoning, of course!
Pour it up pour it up, watch it all fall out. Pour it up pour it up, that's how we ball out.
I like to add a little cheese before they go in. But remember to not fill them up to the top because they rise just a bit!
Pop them in the oven for 15 minutes and then my favorite is to get the tops a little toasty, so I broil for about 3-4 minutes.
